Tamales aren’t just delicious; they’re an important culinary tradition dating back thousands of years. On Sept. 16, Mexican Independence Day, Metropolitan State University of Denver’s Office of Diversity and Inclusion celebrated this ancient custom with a tamal-making workshop as part of Hispanic-Serving Institutions Week.
In this video, MSU Denver’s Manuel Del Real, Ph.D., executive director for HSI and Inclusion, and José Quintana, senior lecturer in the Department of Chicana/Chicano Studies, share why tamales are an important part of Latino culture and heritage.

Nearly half of the undergrads identified as students of color, 56% were first-generation college students and 74 were military veterans — all embodying MSU Denver’s mission to provide accessible, high-quality education to learners from all walks of life. Davidson, in her 15th Commencement as president, reminded the crowd of their strength: “You are all different and unique individuals, and you are ALL Changemakers,” she said.
