Combine sugar, water and corn syrup in a heatproof saucepan on the stovetop* over high heat. Bring to a boil, then reduce to medium heat until the mixture reaches 300°F (hard crack stage) on a candy or digital thermometer. Remove from heat and carefully** dip fruit skewers into the syrup, coating evenly. Dunk in ice water for 2-3 minutes or let cool and harden for 5-10 minutes on parchment paper. *Do not use the microwave to make tanghulu. The high temperature can cause microwave-safe containers to melt, and glass containers can lead to burns. **Use caution when dipping the fruit into the syrup, which is very hot and can cause burns with prolonged skin exposure.
